Currently Postfix stores its mail queue to the default /var/spool/mqueue. If the container is recreated while mail is in its queue (for example, due to it being undeliverable), this mail will be lost. Storing the mail in the persistent /config directory will mitigate this issue.

The option is set in /etc/postfix/main.cf
